Easy, no-bake cheesecake cubes will serve up an irresistibly creamy taste, enhanced by a fresh strawberry flavour. And to make it really easy, let''s make them without baking.


Cheesecake has always seemed like a fancy dessert for special occasions, but once you''ve made it, you''ll see that it''s perfectly easy to prepare and not a dessert that''s only suitable for special occasions. As they do not need an oven, they can also be prepared as a refreshing summer dessert.

BAM Strawberry Dressing is a fruit preparation containing at least 70% strawberries. Strawberry topping can be used as a topping for pancakes, to brighten up the taste of plain yoghurt or as a topping after cream cheesecake cubes.

For the biscuit base:

  • 75 g unsalted butter
  • 200 g biscuit crumbs

For the cheesecake filling:

  • 455 g cream cheese
  • 90 g powdered sugar
  • 2 teaspoons BAM vanilla paste
  • 115 g whipped cream
  • pinch of salt
  • 60 ml corn syrup

For the strawberry topping:

  • BAM Strawberry dressing

Instructions:

For the cheesecake cubes:

Line a square baking tray with baking paper. In a mixing bowl, combine the cookie crumbs and melted butter. Stir until all the ingredients are combined. The mixture should resemble wet sand. In the prepared baking dish, press the mixture into the cookie base. Followed by the cheesecake filling. In a clean bowl, mix together cream cheese, powdered sugar, corn syrup, BAM vanilla paste and salt. Add the BAM strawberry topping to the mixed filling and stir until completely combined. The cheesecake will be light and creamy but will set in the refrigerator.

Spoon the cheesecake over the crust of the prepared biscuit base and spread into an even layer with a rubber spatula. Spoon a dollop of BAM strawberry topping on top and use a butter knife to create large swirls. Cover the baking tray tightly with plastic wrap and place in the fridge overnight to set. Serve cold!
