As the days get shorter and the air gets colder, we treat ourselves to warm, soft cinnamon rolls. Nothing creates a more homely atmosphere than the smell of freshly baked cinnamon rolls filling our kitchen. With a rich cinnamon filling and a silky glaze, these delicious treats not only warm us up, but also make for an unforgettable dining experience.


While the dough rises, the scent of cinnamon gently spreads through the room, inviting us to take our first bite. Once baked and topped with a sweet glaze, the rolls are perfect for autumn afternoons with a hot cup of tea. Homemade cinnamon rolls are ideal for gathering with loved ones, bringing warmth and joy to every bite.


For an even better taste, use BAM vanilla paste. Made from premium Madagascar bourbon vanilla extract, with no added alcohol, the paste is enriched with real vanilla seeds that add both a superior taste and a beautiful visual effect to our dishes.

  • 500 ml warm milk
  • 80 g sugar
  • 20 g BAM vanilla sugar with real vanilla
  • 115 g melted butter
  • 7 g dry yeast
  • 625 g flour
  • 5 g baking powder
  • 10 g salt

NADEV:

  • 150 g brown sugar
  • 170 g softened butter
  • 30 g cinnamon

GLAZURA:

  • 115 g cream cheese
  • 30 g melted butter
  • 60 ml of milk
  • BAM vanilla paste
  • 125 g powdered sugar

In a large bowl, mix the warm milk, sugar and melted butter. Keep the mixture warm.Sprinkle the yeast over the milk, stir and leave in a warm place for about 10 minutes to activate.

Add 500 g flour and mix with a wooden spoon until just combined.Cover the bowl with a kitchen cloth and leave to rise in a warm place for 1 hour to double in size.

Add a cup of flour, baking powder and salt to the risen dough. Mix, then knead on a clean surface. Knead the dough for at least 10 minutes until it is smooth and not sticky. The dough should be smooth and elastic.

Roll out the dough into a rectangle about 1 cm thick. Trim the edges to make them sharp and even.

In a medium bowl, combine the brown sugar, butter and cinnamon and mix well. Then spread the filling evenly over the dough.

Once you have coated the dough with the filling, it''s time to seal the dough tightly. Starting from the short edge, roll the dough into a roll and pinch the end to seal it tightly. Place it fold-side down and trim the uneven ends.

Cut the roll into equal pieces. Place the cinnamon rolls in the prepared baking tray, cover with a kitchen cloth and leave to rise for 35-45 minutes, until they have risen by about half.

Once the cinnamon rolls have risen, bake them at 180 °C for 25-30 minutes until golden brown.

While the cinnamon rolls are baking, in a medium bowl, whisk together the cream cheese, melted butter, milk and vanilla until smooth. Gradually add the icing sugar and mix well until the mixture is smooth and not runny.

Once the cinnamon rolls are baked, leave them to cool slightly (about 10 minutes) and then pour the glaze over them.
