Vanilla cream with kiwi in a glass is a quick and delicious dessert. Vanilla and kiwi are a unique pair: the kiwi gives a special kick to the vanilla cream, while the latter balances the acidity of the kiwi. Vanilla cream is a type of dessert that can be prepared in a glass. In this recipe, we will fill the glass with a layer of kiwi jelly and a delicious vanilla cream.

The vanilla cream can be prepared in two ways: with the BAM vanilla paste, which has a rich taste and intoxicating aroma and is made from the genuine extract of bourbon vanilla from Madagascar.

for the cream:

  • 500 ml milk
  • 3 pumpfuls BAM vanilla paste
  • 90 g granulated sugar
  • 35 g starch
  • 2 egg yolks (medium)
  • 2 whole eggs (medium)
  • 30 g butter
  • 150 g whipping cream
  • or 175 g BAM vanilla cream mix and 500 ml cold milk

for kiwi jelly:

  • 3 ripe kiwis
  • 2 packets vanilla sugar
  • 20 g granulated sugar (or to taste)
  • 2 sheets gelatin

decoration:

  • 1 ripe kiwi

Instructions:

Bring 400 ml of milk to a boil. Whisk 100 ml milk with sugar, vanilla paste, starch and eggs. Remove the milk from the heat and add the egg mixture, stirring constantly. Return to the heat and cook for another 4 minutes, stirring constantly, until the cream thickens. Add the butter to the cooked vanilla cream and stir until it melts. Cover the vanilla cream with plastic wrap and refrigerate. Whip the whipping cream and place in the refrigerator. If you use the BAM Vanilla Cream Mix, follow the instructions on the package or on the website next to the product description.

Peel the kiwis, mash them (they should yield about 250 ml of puree) and boil them with all the sugars for at least 5 minutes. Soak the gelatin sheets in cold water for at least 5 minutes. Remove the kiwi puree from the heat, let it cool a bit and then add the soaked gelatin sheets until they dissolve. Divide among the glasses and place in the refrigerator to set.

Fill the cream into a piping bag (whisk beforehand if necessary) and pipe into glasses. Cut the kiwi into small cubes and use to decorate the top.
