The Tsar''s roast with apples is a traditional Austrian dessert. It resembles sliced pancakes topped with powdered sugar or your favourite toppings. It is made from a dough usually made from flour, egg, sugar and milk. The Tsar''s pancakes are usually buttered and baked until the mixture is thick and fluffy and the pancakes are thicker and fluffier. The pancake is then torn into small pieces and usually served with fruit compote or jam.

The Tsar''s roast with apples is a juicier version of the traditional recipe. The apples are often stirred into the batter, and the apples can be spiced with cinnamon and sugar for extra flavour .

1. How do I make apple roasted caesar (schmorn)?

To make apple roast, you first need to peel and slice the apples. The peeled and sliced apples are then fried in a pan with butter, sugar and cinnamon until soft and caramelised.

Next, prepare the pancake batter and bake it in a separate pan until it forms a thick pancake. When it is ready, tear it into small pieces with a spatula and stir in the cooked apples. Serve the apple roast while still warm, sprinkled with icing sugar and topped with fruit compote or jam, if desired.

For the roasted apple caesar:

  • 2 large apples
  • 60 g unsalted butter
  • 2 tablespoons crystal sugar (for caramelised apples)
  • 1 teaspoon ground cinnamon or BAM sugar love
  • 120 g flour
  • 50 g sugar
  • 1/2 teaspoon salt
  • 4 large eggs, separated
  • 240 ml of milk
  • 1 teaspoon BAM vanilla paste
  • Powdered sugar (for decoration)

Instructions:

For the preparation of apple roasted caesar:

Preheat the oven to 190 °C. In a large pan over a medium heat, melt and add the thinly sliced apples, two tablespoons of sugar and one teaspoon of ground cinnamon. Cook for 5 to 7 minutes or until the apples are soft and the sugar has dissolved.

In a large bowl, whisk the egg yolks until pale and creamy. Add the sugar and salt and whisk until combined. Gradually add the flour and milk. Whisk until the mixture is smooth. In a separate bowl, whisk the egg whites until stiff peaks form. Gently fold the egg whites into the batter.

In the same pan as the apples, melt 2 tablespoons of butter over a medium-high heat. Pour the batter into the pan and spread it evenly. Cook for 3 to 4 minutes. Using a spatula, turn the caesar roast over in small pieces and cook for a further 2 to 3 minutes.

Add the cooked apples to the pan and gently stir everything together. Transfer the pan to the preheated oven and bake the roast for another 8 to 10 minutes. Serve the roasted caesar warm and garnish with icing sugar.
