Clean the apples and cut them into thin slices. Roll out the puff pastry on a well-floured surface. Cut it into 9 equal pieces and place 4-5 pieces of apple in the middle of each piece. Add a little cinnamon and BAM vanilla paste. Sprinkle a spoonful of sugar on top.

Fold the dough over the apples as if you wanted to make small pockets. Place each apple pie on a lined baking tray. Whisk the egg in a small bowl and brush the tops of each pie. Sprinkle with sugar.

Bake the apple pies at 220°C for 15 minutes. Cool quickly and serve.
