Preheat the oven to 180 °C and prepare a tart tin by greasing it with butter and dusting it with flour or lining it with baking paper.

In a large bowl, whisk the butter, BAM natural table sweetener and BAM vanilla sugar until the mixture is light and fluffy. Gradually add the eggs, one at a time, mixing well after each addition. When the eggs are well incorporated, add the grated lemon zest and lemon juice.

In another bowl, mix together the flour, baking powder and a pinch of salt. Gradually add the dry ingredients to the wet mixture and stir gently to combine. Then spread the mixture evenly in the prepared baking tin.

Bake the cake in the preheated oven for about 40-45 minutes, or until a toothpick inserted in the centre of the cake comes out clean. After baking, leave the cake to cool in the tin for about 10 minutes, then transfer to a wire rack to cool completely. Finally, dust the cake with icing sugar.
