Who doesn''t know Bajadere, the dessert that brings us back nostalgically to our childhood days? It is still one of the most popular desserts throughout the countries of the former Yugoslavia; some say there are as many recipes for it as there are cooks.

The famous Bajadera celebrates 65 years this year

Bajadera are the famous Krás Pralines with a wonderful chocolate flavour and a hint of hazelnut. Initially sold by the famous chocolate company in neatly shaped boxes of chocolates along with its other sweet products, they quickly won the hearts of chocolate lovers and were sold as a stand-alone product in 1954. The delicious nougat cream of hazelnuts, almonds and chocolate, shaped into pralines wrapped in gold foil, is not only a favourite with sweet tooths in the countries of the former Yugoslavia, but is also popular in other parts of the world. The elegant golden confectionery is thus suitable for both home sweetening in the company of loved ones and as a gift.

In contrast to the contents of the packaging, the appearance of the latter was only designed in 1989 - since then, of course, it has been the hallmark of these delicious pralines. In 2015, however, a new, festive version of the praline, called Bajadera Amarus, was designed to celebrate its 60th anniversary. It is made with delicious dark nougat and enriched with pieces of crunchy almonds and hazelnuts.

Recipe for homemade Bajadera

Its popularity is also demonstrated by the fact that it is one of the most frequently purchased sweets in Croatia - especially during the Christmas holidays. If you have never made Bajadera at home before, we highly recommend you give it a try, as making it at home can be great fun. The recipe is extremely simple, as you can make the pralines without baking, and it only takes half an hour to prepare. All you need are hazelnuts, biscuits, sugar, butter and chocolate-hazelnut spread.

  • 300 g hazelnuts
  • 250 g butter biscuits
  • 150 g sugar
  • 300 g butter
  • 2 dl water
  • 6 tablespoons chocolate-hazelnut spread by Mojačokolada.si
  • 200 g chocolate
  • 5 tablespoons oil
  • 80 g butter
  • 3 tablespoons water

Instructions:

Preparation procedure:

Grind the hazelnuts in a blender.

Shake the biscuits into a transparent food bag and crush them by pressing the bag against the work surface with your hands. You can also use a rolling pin.

Put the ground hazelnuts and crushed biscuits in a bowl and mix well with your hands.

Heat the sugar and water in a small saucepan over low heat and stir until the sugar is completely melted. Simmer for 5 minutes.

Remove the pan from the heat and add the butter, cut into pieces. Stir until the ingredients are completely combined, then shake them into the bowl with the hazelnuts and cookies. Stir well again.

Divide the mixture into 2 parts and add 6 tbsp of the chocolate-hazelnut spread to one part and mix well.

Brush the baking tray thinly with butter and spread half of the chocolate-hazelnut mixture on top with your hands. Then, with your hands, apply a layer of the other part of the mixture (which does not contain the spread). Press your palms firmly against the base of the baking tray and flatten until the contents of the tray are perfectly even.

Melt the chocolate over a pan of water and add the oil, butter and water. Stir until you have a nice shiny mixture. Pour the chocolate glaze over the contents of the baking tray and leave to cool for a few hours.

When your Bajadera is completely cooled, cut it into cubes and serve. Have a good run!
