Strawberry muffins are rich in fibre, antioxidants and essential nutrients, while the addition of chia seeds provides an extra dose of omega-3 fatty acids and energy. With this recipe, you can enjoy the delicious combination of juicy strawberries and crunchy muffins, guilt-free.

Ingredients:

For strawberry muffins with chia seeds:

  • 200 g wholemeal flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons chia seeds
  • 60 ml coconut oil
  • 80 ml honey
  • 2 ripe bananas, mashed
  • 120 ml unsweetened apple juice
  • 1 teaspoon BAM Bourbon vanilla paste
  • 120 g BAM Strawberry topping

Instructions:

For strawberry muffins with chia seeds:

Preheat the oven to 180°C. Prepare the muffin tins and line them with paper baskets or grease them with a little oil.

In a large bowl, mix together the wholemeal flour, baking powder, baking soda, salt and chia seeds.

In another bowl, mix together the coconut oil, maple syrup, mashed banana, apple juice, and BAM Bourbon vanilla paste.

Pour the wet ingredients into the dry ingredients and mix gently until all the ingredients are combined. Be careful not to over-mix, so that the muffins do not become tough.

Finally, stir in the BAM strawberry topping.

Then fill the prepared muffin tins to about ¾ of the height.

Bake the muffins in the preheated oven for about 18-20 minutes or until golden brown. You can test with a toothpick: it must remain dry when inserted into the muffins and pulled out.

Once baked, remove them from the oven and leave them to cool a little in the moulds, then transfer them to a wire rack to cool completely.
