And today we''re adding a banana bread recipe with chocolate and peanut butter to the collection. Before we start, here are a few tricks to make it smell so good to your neighbours.

  • Before you add the peanut butter to the batter, you need to melt it. Peanut butter is known to be difficult to spread or stir. Place the peanut butter in the microwave for 30 seconds or until it is quite runny and easy to stir.
  • The trick to making sweet, tasty banana bread is to use overripe (even brown) bananas.
  • Avoid natural peanut butter.
  • Garnish thebanana bread with sliced bananas. You can garnishthe banana bread with sliced banana rings or cut the banana lengthwise into strips and place the long strips on top of the bread. Either way, it will look and taste fabulous!

  • 80 g peanut butter (melted)
  • 200 g sugar
  • 300 g mashed bananas
  • 100 g vegetable oil
  • 2 eggs
  • 1 teaspoon BAM vanilla paste
  • 120 g flour
  • 50 g BAM cocoa powder
  • 1 teaspoon baking soda
  • pinch of salt
  • banana slices

For the peanut butter topping:

  • 3 tablespoons creamy peanut butter

Preheat the oven to 180°C. Line a large baking tray with baking paper. Set aside. In a large bowl, combine the slightly melted peanut butter, sugar, mashed bananas, vegetable oil and eggs. Stir in the cocoa, baking soda, salt and BAM vanilla paste. Finally, stir in the flour.

Pour the resulting mixture into the baking tray and place the thinly sliced banana pieces on top. Bake for about 55 minutes, until a knife inserted in the centre of the banana bread comes out clean. Cool on a wire rack for another 20 minutes. When the banana bread has cooled slightly, pour the peanut butter over it. Heat in a microwave-safe bowl for 30 seconds, then stir. The butter should have a creamy and slightly runny texture. Drizzle over the banana bread and serve.
