Although their appearance is elegant and sophisticated, many wonder whether their preparation is as complicated as it seems.

In this article, we'll explore everything about macaroons - from their history to the secrets of perfect preparation and the best ideas for fillings that will make them even more delicious.


From Italy to France


Macarons as we know them today originated in France, but their history is much more complex. Their origins date back to Italy, as far back as the Renaissance when almond biscuits were popular among Italian noblemen.

The name ''maccherone'' is said to derive from the Italian word for ''fine dough''. When Catherine de Medici became Queen of France in 1533, she brought Italian confectionery to France, where maccheroni evolved into the more sophisticated version we know today.


The real boom came in the 19th century when French pastry chefs began to create versions with two biscuits, between which a cream filling was added. This version is known today as the ''macaron Parisien'' or ''macaron Parisien'' and is the one that has taken the world by storm.


Tricks for the perfect macaron: What do you need to know?


Making macarons has a few key steps that you need to master if you want to achieve perfect results. Although they may seem complicated at first, these tricks will help you avoid the most common mistakes.


1. Stick to the recipe exactly


When making macarons, precision is key. Measuring "by eye" is not an option - it is best to use a weighing scale to measure out the ingredients precisely, as the ratio of ingredients is important for the structure and texture of the macarons. Incorrectly measured ingredients can cause the shells to not have the right texture.


2. The ingredients should be at room temperature


One of the key steps in making perfect macarons is to ensure that all ingredients are at room temperature. The egg whites must be whisked properly, which is only achieved if they are at room temperature. It is also important that the almond flour and sugar are well mixed so that the mixture is even and smooth.


3. Correct mixing technique (macaronage)


Mixing the macaron mixture (the so-called ''macaronage'' technique) is one of the most important steps in the preparation of macarons. If you stir too little, the mixture will be too thick, which will cause the macarons not to spread well. If you stir too much, the mixture will be too runny, and the macarons will not have the characteristic crispy shell. The aim is a smooth, shiny mixture.


4. Proper drying before baking


Before you put the macarons in the oven, you need to let the mixture dry on the baking tray for about 30-60 minutes, depending on the humidity of the room. This allows a thin crust to form on top, which is crucial for their characteristic appearance and texture. The dough should not stick to our fingers when we touch it; this is when we know they are sufficiently dried.


5. Baking at the right temperature


Baking macarons can be delicate. Too high an oven temperature can cause the shells to crack or rise too much, while too low a temperature will not produce the desired crispy crust. It is best to bake macarons at 150-160°C for about 12-15 minutes, but it is advisable to check how they are baking in between, as each oven works slightly differently.

Instructions:

1 Add the vanilla paste, caster sugar, edible starch and rum to the yolks. Add 50 ml of milk and stir with a whisk until smooth and lump-free.
2 Put the remaining milk in a saucepan and heat it to boiling.
3 Mix one ladleful of the boiling milk with the egg mixture, then slowly add the egg mixture to the boiling milk, stirring with a whisk.
4 Cook the resulting cream over a medium-high heat, stirring constantly, for another 5 to 7 minutes, until it thickens.
5 Stir the coarse coconut flour into the cream. Adjust the quantity to your taste.
6 Remove the saucepan from the heat. Cover it with transparent cling film, right up to the custard, to prevent a crust from forming on the custard.
7 Place it in the fridge for about 5 hours to cool completely and firm up.
8 Whip the cooled cream with an electric hand mixer until smooth, then fold in the whipped cream with a spatula. Adjust the quantity depending on how compact you want the cream.
9 Pipe the sponge cake or biscuits on the bottom of the glasses and pipe the cream on top. Garnish the Raffaello in the glass with coconut and a Raffaello ball.
10 Preheat the oven to 180°C. Mix the graham crackers and almonds into the crumbs. Sift into a medium bowl and mix the sugar and melted butter until combined. Press firmly on the base and up the sides of the pie pan. Pre-bake for 8 minutes. Leave the oven on.
11 Prepare the filling: whisk the sweetened condensed milk, lemon juice and egg yolks. Pour the prepared lemon cream into the warm cookie crust. Bake the pie for 18-21 minutes or until it is *loosely* puffed in the centre. Remove from the oven and allow to cool completely on a wire rack. Once cool, cover and chill in the fridge for at least one more minute. Decorate as desired.
